Glenwood Springs, CO – April 2008 — Hotel Colorado Executive Chef Ron Jackson invites visitors and guests to savor high-country cuisine and the rich flavors of the west in the hotel’s distinctly different dining spots. Jackson’s menus emphasize a broad array of freshly prepared foods and regionally grown produce and meat, including Colorado-grown lamb, bison, and elk. Comfort foods will be the order of the day at the Polo Wine and Martini Lounge, with tapas and appetizers reflecting a warm, casual ambiance. Jackson will feature some organic products, prepared with fresh, home-grown seasonings from the Hotel Colorado’s own herb garden.

Baron’s
As part of a $2 million renovation, Baron’s has been unveiled at the Hotel Colorado. The restaurant, formerly in the lobby, has relocated to the interior area of the hotel between the two grand staircases. An updated rendition of the historic waterfall, now trickling gently down a natural stone wall, once again adds to our guests’ dining pleasure. An additional private dining area, Cedar Banks, has been created for parties, meetings, rehearsal dinners, and other special gatherings. Open daily for breakfast, lunch, and dinner.

Polo Wine and Martini Lounge
Adjacent to Baron’s is the new Polo Wine and Martini Lounge. This cozy but sophisticated room features signature tapas, wine flights, martinis, cigars, desserts, and cordials reminiscent of the early 1900s, when Teddy Roosevelt and Al Capone spent their holidays with family and friends. Open evenings, year-round.

Courtyard Café and Copper Top Bar
Throughout the summer, enjoy the scenic Courtyard Café and Copper Bar, popular among guests and locals alike. Musicians perform anything from Caribbean tunes to bluesy ballads regularly on warm summer nights. Flower-lined walkways create a colorful backdrop for the courtyard's centerpiece fountain. Chef Jackson brings a balance of seasonal ingredients and creative themes each designed to tantalize the palate. An extensive summer cocktail and wine list complements the menu to provide an exceptional dining experience. Open seasonally for lunch, dinner, and cocktails. Guests can also enjoy cool evening beverages and tapas under the veranda at the Copper Top Bar, next to the Courtyard Café. The Copper Top is also a great place to host cocktails party before a wedding celebration or rehearsal dinner. Open seasonally.

Cedar Banks

This intimate private dining space is ideal for small group dinners, family gatherings, or small weddings. Available year-round.

Legends
Legends Trading Company in the Hotel Colorado lobby offers unique gifts and fresh-baked goods, natural juices, smoothies, fabled pastries, and delectable desserts. Reminiscent of an old-west general store, Legends’ vintage soda fountain counter serves guests in a casual atmosphere. Victorian loveseats and marble-topped tables are arranged in a parlor setting where visitors can sip a Milky Way latte or play board games. A giant colorized print on the wall depicts a rugged cowboy pouring Teddy Roosevelt a cup of joe.

Coffee has long been an integral part of the Hotel Colorado dining experience. Hotel Colorado’s own Arbuckle’s Presidential Reserve coffee captures the essence of Teddy Roosevelt’s personality. This distinguished blend combines the finest coffees from South America and the South Pacific. Rich in flavor with a smooth body and echo of spice, this coffee is produced exclusively for the Hotel Colorado by Arbuckle Coffee Traders.

Executive Chef Ron Jackson
Littleton, Colorado born and raised Jackson is passionate about food. His résumé reads like a Who’s Who, studded with international notables, celebrities, and power-brokers. Jackson’s love of cooking started early, at 14, and at 20 he launched his career as a baker in the Army. Later, after graduating from Scottsdale Culinary Institute, he honed his skills in a series of sous chef positions in several Marriott operations in Scottsdale, Lake of the Ozarks, Snowmass, and Vail.

Jackson moved to England, where he was Executive Sous Chef and Master Chef at the Hyatt Regency in London, catering private dinners for the G8 Summit, Charles, Earl Spencer (Princess Diana’s brother), and then-Prime Minister Tony Blair. He worked as a private chef for Tina Turner and Rob Lowe. Jackson also served as Executive Chef at Moor Hall Hotel in England, built in the 1500s and frequently visited by King Henry VIII.

Jackson’s culinary awards include the Tattinger Chef of the Year (2000), March Awards Chef of the Year (2001).
