Glenwood Springs, CO – October 20, 2007 — Hotel Colorado in Glenwood Springs, Colorado extends a warm welcome two new hospitality staff members, Executive Chef Ron Jackson and Food and Beverage Director Dan McKinney. With the onset of cooler weather — and in celebration of the extensive renovation of the historic hotel’s dining facilities — David Storm, President of Providence Hospitality Partners, management company for Hotel Colorado, wanted to completely revamp the hotel’s food and beverage offerings. Ron Jackson, Executive Chef
Littleton, Colorado born and raised Jackson is passionate about food. His résumé reads like a Who’s Who, studded with international notables, celebrities, and power-brokers. Jackson’s love of cooking started early, at 14, and at 20 he launched his career as a baker in the Army. Later, after graduating from Scottsdale Culinary Institute, he honed his skills in a series of sous chef positions in several Marriott operations in Scottsdale, Lake of the Ozarks, Snowmass, and Vail.
When he moved to England, his career really took off, and as Executive Sous Chef and Master Chef at the Hyatt Regency in London, he catered such prestigious functions as the G8 Summit (twice), the European Defence Ministers Association, and private dinners for Charles, Earl Spencer (Princess Diana’s brother) and then Prime Minister Tony Blair. He also worked as a private chef for Tina Turner and Rob Lowe when they were in England and was Executive Chef for the Manchester United Football Team. Jackson served as Executive Chef at Moor Hall Hotel in England, built in the 1500s and frequently visited by King Henry VIII.
Before joining Hotel Colorado, Jackson was a consultant for Park Plaza Hotels, developing and rolling out an Asian restaurant concept.
Jackson has big plans for the two Hotel Colorado Restaurants, Baron’s and Legends, emphasizing a broader array of freshly prepared comfort foods and regionally grown produce and meat, including lamb, bison, and elk, from Colorado. Some organic items will be added to the menus. At Legends coffee shop, he will feature “autumn muffins” to usher in the colors of the Colorado fall season. Comfort foods will also be the order of the day at the Polo Wine and Martini Lounge, with tapas and appetizers reflecting a warmer, more casual attitude.
Jackson’s culinary awards include the Tattinger Chef of the Year (2000), March Awards Chef of the Year (2001).
Dan McKinney, Food and Beverage Director
A true hospitality professional with more than 30 years of management expertise with such companies as Hyatt Hotels, Palace Hotels, The Hotel Jerome, Red Lobster, Rainforest Café and 10 years as owner/operator/chef of two restaurants in Colorado resort towns, Dan McKinney is equally at home in the kitchen as a chef or in the executive suite as Food and Beverage Director.
As Food and Beverage Director for The Hotel Colorado, Mr. McKinney will enhance a great, classic property by showcasing a quality menu that incorporates local fresh farm and ranch products. The new menu under development will be unveiled this November, incorporating classic cooking techniques, the freshest local ingredients, and the latest culinary trends.
Born and raised in Philadelphia, Dan attended St. Joseph’s University in Philadelphia and University of Delaware, where he earned an MBA while employed in the university’s food service department. Later, he obtained a PhD in Business Management from St. Joseph’s University. He trained under two European master chefs. Dan served in the United States Army (101st Airborne) in Viet Nam.
