Terry Allen Joins Hotel Colorado as Executive Chef

Allen, a well-rounded industry veteran with more than 30 years’ food and beverage experience, joins the executive team at Hotel Colorado in Glenwood Springs, Colorado.  

GLENWOOD SPRINGS, Colo. (Sept. 3, 2024) — Hospitality industry veteran Terry Allen joins Hotel Colorado as Executive Chef, bringing more than 30 years’ experience to the “Grand Dame of the Rockies” in Glenwood Springs, Colorado. He begins this week and is already making his mark developing new fall menus for the property’s outlets and holiday catering menus. 

“We are proud to welcome Chef Allen to our executive team as we segue into fall and begin to prepare for the upcoming holiday season,” General Manager Larry MacDonald said. “Chef has worked in all facets of the restaurant industry—from hotels and resorts to restaurants, convention centers and food shops—and in capacities ranging from Sous Chef to Executive Chef and Director of Food and Beverage, General Manager at a historic hotel. He grew up in Western Colorado, and we’re glad to welcome him back to the area he calls home.”

Chef Allen successfully completed a twelve-month ACF-accredited, intensive hands-on Culinary Arts Program at the Grand Hotel Sonnenbichl in Garmisch, Germany, and has an associate degree in culinary arts from the Western Culinary Institute in Portland, Oregon. His decades of experience include stints at the historic Sheridan Inn in Cheyenne, Wyoming; Colorado luxury resorts including The Little Nell and Aspen Meadows Resort in Aspen and Gateway Canyons in Gateway; and restaurants including the Latin-inspired Mariposa in Sedona, Arizona, and the Butchery steakhouse in Denver, Colorado.

The hotel offers three dining options. The Hotel Colorado Restaurant & Bar serves breakfast, lunch and dinner in a beautiful dining room with an indoor waterfall. During the summer months, alfresco lunch, dinner and drinks are also served on the patio and veranda surrounded by shade trees, a fountain and lush gardens. The Coppertop Bar is open seasonally on the patio, and the Indoor Lounge offers a cozy setting year-round with a full bar, meals and tapas. Both offer a carefully curated selection of beer, wine and signature craft cocktails. Legends Coffee & Gift Shop, located in the lobby, serves delicious hot and cold beverages prepared by professional baristas alongside freshly baked pastries. Chef Allen will oversee all food and beverage operations including banquets and catering.

MacDonald added, “Our guests will begin to see more traditional Colorado dishes and seasonal offerings at the property. We always prioritize high-quality, locally sourced ingredients. Colo-Mex flavors will continue to be featured in many of our dishes; this is very much in Chef Allen’s wheelhouse.”

Hotel Colorado is listed in the National Register of Historic Places, is a member of Historic Hotels of America and has recently completed an $8 million comprehensive guest room renovation.
